- 3 – 4 Chicken Fillets (deboned)
- 1 Cup Cornflour
- 2 Eggs are beaten
- ¼ Cup Olive Oil
Sweet & Sour Sauce
- ¼ Cup Sugar (you can add more to suit your taste)
- 4 Tablespoon Tomato Sauce
- ½ Cup Vinegar
- 1 Tablespoon Soy Sauce
- 1 Teaspoon Garlic Salt
Rinse the chicken breasts and cut into cubes. Season with salt and Pepper.
Coat the chicken in the cornflour then into the beaten egg.
Heat the oil in a large frying pan and brown the chicken pieces, but don’t cook it completely. Place the chicken in a baking dish and bake at 180deg C for 24-45 minutes, turning consistently.
For the Sauce:
Mix all the sauce ingredients together in a saucepan and heat until the sugar has dissolved.
Serve with rice or pasta.
